- 1 Ripe Pineapple or pre-prepared spears
- 1 pkg Small Corn Tortillas
- Pico Di Gallo- *pre-made or recipe below
Remove skin from pineapple and cut into bite-sized pieces. Wet a Green Steamer and place open in a microwave safe bowl large enough to hold all of the pineapple. Place pineapple on Green Steamer in bowl and wrap Green Steamer completely around the pineapple. Flip the Green steamer full of pineapple in bowl so the seams are now face down. Add about ½ inch of water to the bowl and microwave on high for 3-4 minutes depending on the strength of your microwave. Let cool for several minutes befor unwrapping the pineapple.
Place several pieces of warm pineapple on fresh corn tortillas and top with pico di gallo. Enjoy this super simple and tasty meal!
Tip- double up on the corn tortilla base to stand up to these juicy tacos!
Finely dice the roma tomatoes and add to thinly sliced green onions and chopped cilantro. A dd garlic and squeeze the juice of the lemon. Mix all ingredients well and add salt and pepper to taste. Pico Di Gallo gets better the longer it sits so make it a day ahead and keep it in the refrigerator.

- 4 Roma tomatoes
- ½ bunch Cilantro
- ½ bunch Greens onions
- 1 Tbls Minced Garlic
- Juice of a large Lemon
- Salt and Pepper
